Meet Anamika Agarwal, founder of Bean & Beyond Farm. What began in Dubai in 2022 with oyster mushrooms grown from recycled coffee grounds has grown into a farm built around one belief: food can be grown closer, more thoughtfully and with less waste. Today, Anamika grows grey, pink and yellow oyster mushrooms right here in the UAE – sourcing locally wherever she can and composting the organic waste after every harvest.
