The fastest way to make oyster mushrooms taste like a restaurant dish. Crispy edges, buttery garlic base, done in under 10 minutes. This technique focuses on high heat to achieve that sought-after "meaty" texture while preserving the delicate aroma of the mushrooms.
The Ingredients
- • 250g Mixed Oyster Mushrooms
- • 2 tbsp butter or olive oil
- • 3 garlic cloves, sliced
- • Fresh thyme (3 sprigs)
- • Salt & Black pepper
- • Squeeze of lemon
- • Fresh parsley
Instructions
Prep by Tearing
Tear mushrooms by hand into large pieces. Never cut tearing follows the natural grain, providing better texture and more surface area for crisping.
The High-Heat Sear
Heat a wide pan on high until very hot. Add fat, then mushrooms in a single layer. Do not stir for 2–3 minutes until deeply golden underneath.
Aromatics & Seasoning
Flip once, add garlic and thyme, cooking for 2 more minutes. Season with salt and pepper only after searing to prevent the mushrooms from steaming.
The Finish
Finish with a squeeze of lemon and chopped parsley. Serve immediately over toast, rice, or alongside eggs.
